    I would love to make mayonnaise with Leticin. However, my husband would love those peanut butter cups. They look yummy! What a great video! So informative for the home cook. Thank you!

    Oh my! What a great video! I would love to make Mayo with the lethicin but my husband would love the peanut butter cups so maybe both. Lol.

  • Since lecithin occurs naturally in eggs and pastry cream is made with egg yolks (fillings for Ă©clairs etc.), I would love to use the liquid lecithin to make an egg-free pastry cream. The emulsion should form nicely and there would be a cream filling, but without the use of eggs. It could be also be a vegan pastry cream!

    • It would be possible, but you would need to make sure that there is fat in the recipe for the liquid soy lecithin to dissolve in. Good idea!

  • I want to use the lecithin to emulsify MCT oil into magnesium oil (that is water based) to make a headache liquid for my roller ball bottles)

    I make my own soy milk from scratch, using only soy beans. Would a liquid lecithin help keep the milk from separating? Even though I shake the jar of milk every time before I use it, towards the end of the jar there’s a settling of the milk solids. Thank you!

  • German chocolate cake calls for 4 egg yolks. Can I substitute the yolks with liquid soy lecithin? If so, how much for each yolk? I already tried replacing each yolk with a tablespoon of of liquid soy lecithin and it was a complete disaster.

    • No. The liquid soy lecithin can replace the small amount of lecithin that is naturally occurring in a yolk, but you will loose all of the protein and fats that are beneficial in a yolk.
