WTF Chaffles: Better Than Bread

A chaffle (or cheesy waffle) is a low net carb staple food in a keto diet, often taking the place of bread. But with cheese and eggs dominating the flavor of the chaffle, it’s no surprise that it can easily overpower the flavor of anything that you eat it with. The challenge Scott and Janie tackle this week, is how to make a chaffle more of a multi-purpose sandwich bread substitute? We walk through our research and development process for refining the taste and texture of chaffles so that it has a more neutral taste profile and a crispier bite without adding any net carbs… on this week’s WTF.

    I’d like you to recreate a cracker that is actually crispy.

    Butter crackers
    2-1/4c almond flour
    4 tbsp butter
    2 egg whites
    Whip butter. Add almond flour and egg white. Roll between parchment to 1/8 inch thick.
    Cut into square with pizza cutter or knife. Bake at 400f for 10-14 minutes. Cool. Break apart

  • I haven’t found a recipe for a keto boiled sugar sweet, but think there might be one out there. If not, could you give it a whirl?

    The rationale for the possibility of such a beastie: Allulose. Allulose acts so much like sugar when heated. I’ve even heard that it’s possible to get allulose to run through the heated sugar stages (soft ball-hard crack), but I’m scared to try it myself.

    I foresee much trial and error.

    • In our workings with allulose, we have not been able to get it to reach the heated stages of sugar. Perhaps at a higher temperature, but you run the risk of burning it.

  • What about a keto cauliflower pizza crust

  • Hello, LOVE YOUR STUFF!!! Where do I find the carb counts on the chaffles? Also, do u have a book that talks about all of your ingredients, and I mean all of them, and how to use them? Sorry if these r repeat questions, not good on the navigating. :0)

    • We just started doing nutrition facts for the keto recipes, we will have to go back and update the chaffle when we get the chance. As for a book, no but all the ingredients have usage information here on our blog!

    I would like to see a better recipe for Taco Shells. My recipe is 1 med head cauliflower (chopped in food processor then microwave 10 minutes & squeeze out moisture), 2 1/2-3 cups mild cheddar, added to cauliflower, stir, microwave 1.45 minutes….+1 egg white. Blend all. Spread on parchment paper in a circle. Bake 9 min. at 400. Drape over a rolling pin to harden.
