- 100g (¼ cup 3 tbsp) Water
- 2g (1 tsp) Burger Binder or Methylcellulose HV
- 300g (1 ¼ cup 2 tbsp) Druids Grove Coconut Oil, Melted, but not Hot

Hydrate Burger Binder
Pour water into a blender, and create a vortex.ÂÂSlowly sprinkle the Burger Binder into the water to ensure no clumps form.ÂContinue blending as mixture begins to thicken. Continue blending for an additional 30 seconds to 1 minute to ensure the Burger Binder is fully hydrated.

Emulsify Coconut Oil
Continue blending the hydrated burger binder on High. Make sure your coconut oil is melted but not hot to the touch. If it is too hot, it will not properly emulsify into the burger binder.
Once the burger binder is fully hydrated, slowly stream the coconut oil into the burger binder mixture. It must be streamed in slowly so the emulsion is developed properly.
Once emulsified the mixture should resemble a bright white mayonnaise.

Freeze Emulsified Mixture
Once the emulsion is ready, spread the mixture onto a parchment paper lined baking sheet using a silicone spatula.ÂÂPlace the baking sheet in the freezer and freeze for 3-5 hours or until completely solid.ÂOnce completely frozen, the sheet of marbling fat can be broken into smaller more manageable sized pieces. Store the pieces in an air tight container in the freezer.ÂNote – It’s important to keep the burger binder frozen when incorporating into different plant-based recipes. Keep it in the freezer until it is needed.

Prepare Marbling Fat for Use in a Recipe
To prepare for use, weigh out the required amount for your recipe and break into pea sized pieces.ÂWe find that the best way to create pea-sized chunks is by chopping the pieces with a kitchen knife on a cutting board.ÂYou can also use a cheese grater or fork to break the the marbling fat into pea sized pieces.
