- 120g (1/2 cup) Water
- 120g (1/2 cup) Sugar
- 20g (4 tbsp) Acacia Gum
- Mocktail Ingredients:
- 120ml English Breakfast Tea
- 60ml (2oz) Blackberry Simple Syrup
- 60ml (2oz) Water
- 4-5 drops Baking Spice Elixir
- Ice
- Blackberry for Garnish
- Lemon Twist for Garnish

Create Blackberry Gomme Syrup
Dry mix the sugar and Acacia Gum.
Combine the blackberries, water, and sugar mixture together in a saucepan over medium-high heat. Bring to a boil stirring continuously until the sugar dissolves.
Mash the berries with a potato masher. Allow to sit for 30 minutes. Strain the mixture to remove any solids.
Chill for 30 minutes before using.

Brew Tea
Brew your English Breakfast tea.
Measure out 250ml of tea for this recipe, set the rest aside for future use.

Create Mocktail
Combine tea, water, blackberry gomme syrup, and stir.
Drop 3-5 drops of the Baking Elixir and stir.
Strain the mocktail mixture into a clean whipping syphon to remove ice.

Carbonate in Siphon
Charge once with a Co2 soda charge. Purge the excess oxygen and gas.
Charge with a second Co2 soda charge. Shake well. Release pressure before serving.

Pour, Garnish, Serve
Pour the carbonated mocktail into a highball glass or serving glass of your choice.
Garnish with a blackberry and lemon twist.
