I would like to know if the revelation on how to resolve chocolate covered strawberries from leaking has been resolved. I understand that refrigeration will exasperate this problem. What I am seeking is a solution based resolve, in an example… dip or spray the prepped strawberries with a similar used for the meatless sausages simulated casing.

I don’t believe this issue has been resolved. Overtime anything with water will weep. The best thing I can suggest is a properly emulsified and tempered chocolate. It may also be difficult because there is exposed strawberry after the dipping process. This allows for a liquid to leak out from inside the chocolate rather than be encapsulated.
