In a blender place the black garlic, umami powder, and gin.
Blend for 1 minute before pouring all the contents into a 16 oz whipping siphon.
Charge with 1 N2O charge. Allow it to sit for at least 4 hours to fully infuse. Shake well periodically.
Strain the contents through a 100 micron super bag. The gin is now ready to use.
Fill a mason jar with ice and add the 45g of black garlic gin, lime juice, dry vermouth, and stir 2-3 times. Add the Alice and the magician citrus elixir.
Pour the tonic water into the cocktail and gently stir 2 more times.
Garnish with the charred lime slice and serve immediately.
Store the remaining black garlic infused gin in a sealed bottle.
