  • Food Processor
  • 5 each ½ “ x 6” Wooden Dowels
  • Plastic Food Film
  • 4 each 8” x 12” Pieces Parchment Paper
  • Butchers Twine 
  • 2 each 12” x 12” Sheetpans

Equipment

  • 400 Grams Cubed Pork Butt (30 minutes in freezer)
  • 4 Grams Moo Gloo
  • 1.2 Grams Sodium Tripolyphosphate
  • 7 Grams Kosher Salt 
  • .5 Grams Black Pepper
  • .5 Grams Onion Powder
  • .5 Grams Garlic Powder
  • 4 Each  4”x8” Pieces of Puff Pastry

12 Reverse Pigs In A Blanket

  • Prepare Puff Pastry

    Take a piece of puff pastry and using a dowel roll the puff pastry into a log the same diameter of the dowel.
     
    Roll the parchment paper around the puff pastry and wrap the butchers twine around the parchment paper from one end to the other and tie off leaving the ends open.
     
    Repeat these steps 3 more times and refrigerate until ready to bake.
     
  • Prepare Meat

    Dry mix powder ingredients.
     
    Add chilled cubed pork butt to the food processor and pulse 8-10 times.
     
    Add the dry mix on top of the pork and process for 30-40 seconds.
     
    Scoop out mixture into a bowl and cover.
     
  • Roll Meat

    Lay out a layer of food film on your work station and scoop 100 grams of the pork in the center. Using a spatula spread mixture into a 4 inch by 4 inch square.
     
    Put a well oiled dowel horizontally in the center of the mixture. Wrap the pork around the dowel and twist both ends of the film around the ends of the dowel to form the pork into a cylinder around the dowel.
     
    Repeat steps 8 to 11 with the remaining pork.
     
    Refrigerate overnight to set.
     
  • Cook Meat and Puff Pastsry

    Preheat oven to 375°F.
     
    Unwrap the pork cylinders and put them on a sheet pan and put the wrapped puff pastry on a sheet pan.
     
    Put both sheet pans in the preheated oven and cook the pork for 25 minutes and bake the puff pastry for an additional 5 minutes before removing from the oven.
     
    Let them both rest for 8 minutes.
     
  • Assemble Reverse Pig In A Blanket

    Using a paper towel to hold the pork cylinders gently twist the dowels from the center.
     
    Remove the twine and parchment from the puff pastry.
     
    Put the baked puff pastry rods through the center of the cylinders and using a serrated knife cut through each cylinder to get 5 even pieces.
     
    Serve with your favorite sauce and ENJOY!!!
