Carolina Gold Smoked Ribs

Nothing says summer like smoked meats, and these ribs with a Carolina Gold rub and glaze deliver at every stop. Smoked low and slow all day, these ribs are fall off the bone tender. We took inspiration from the south and created a mouthwatering Carolina Gold sauce. These smoked ribs are sure to be the star of your perfect BBQ party this summer!

Ingredients

  • North Carolina Golden BBQ Ribs Ingredients:
  • 1 rack pork ribs 
  • Dry rub:
    • 10 g (2 tbsp) Ground Mustard 
    • 27 g (2 tbsp) Brown Sugar 
    • 14.5 g (2 tbsp) Apple Cider Vinegar Powder
    • 6.6 g (2 tsp) Garlic Powder 
    • 5.4 g  (2 tsp) Onion Powder
    • 2.7 g (½ tsp) Salt 
    • 1 g (½ tsp) Cayenne
    • 0.5 g (¼ tsp) Cloves 
  • BBQ Sauce:
    • 230 g (1 cup) Yellow Mustard
    • 40 g (2 tbsp) Honey 
    • 55 g (¼ cup) Brown Sugar 
    • 60 g (¼ cup) Apple Cider Vinegar 
    • 1.2 g (½ tsp) Black Pepper 
    • 14 g (1 tbsp) Worcestershire Sauce 
    • 0.8 g (¼ tsp) Garlic Powder 
    • 0.6 g (¼ tsp) Onion Powder 
    • Salt to Taste

Timing

Active Time: 30 Minutes
Total Time: 5 Hours

Yield

1 Rack or Ribs

  • Rub and Smoke Ribs

    Sprinkle the dry rub onto both sides of the ribs and rub it in. Keep in the fridge for 2 or more hours.
     
    Warm the smoke up to 225 F. Once the smoker is at the proper temperature, place the ribs on a rack meat side up.
     
    Leave the ribs in the smoker for 3 hours.
     

 

  • Baste and Wrap Ribs

    After 3 hours remove the ribs and place on a baking sheet. Brush both sides with melted butter and honey.
     
    Wrap the ribs tightly in tin foil and place bone side up, smoke for another hour.
     

 

  • Coat Ribs in BBQ Sauce

    Uncover the ribs and place them meat side up, brush with the BBQ sauce and smoke for another 30-45 minutes.
     
    Remove from the smoke and cover with foil, let rest for 10 minutes.
     
    After resting, brush with more BBQ sauce, cut, and enjoy!
