Clarified Carrot Shot with Cucumber Foam

We’ve created a healthy* clarified carrot shot thanks to the mighty Spinzall 2.0. To round out the shot we’ve topped it with a light and vegetal fresh cucumber foam stabilized with fan favorite Foam Magic. This is going to be your new favorite summer cocktail!

Ingredients

  • Ingredients For Clarified Carrot Juice Cocktail:
  • 1000 Kg (1 Quart) Carrots Peeled and Chopped
  •   250g (1 Cup) Water
  •     25g (3 Tbsp) Pectinex
  •     25g (2 Tbsp) Sugar
  •     Bitters
  •     Vodka
  • Ingredients For Cucumber Foam:
  • 2 English Cucumbers
  • 1.5g (1 Tbsp) Foam Magic
  •    3g (½ tsp) Salt

4oz Clarified Carrot Juice 4oz Cucumber Juice for Foam

  • Prepare Carrots

    Peel the carrots and cut into 1 inch pieces add to sauce pot with the water cover and cook on low heat for 20 minutes.
     
    Turn off the heat and let it stand for 15 minutes before removing the lid.
     
    Pour contents from the saucepan into the bender add the sugar and Pectinex and blend on medium high  for 3 minutes.
     
    Pour the carrot puree into another container and let it stand for 1 hour at room temperature to allow the Pectinex time to be effective. It is very important to let the carrot puree with the addition of the Pectinex to stand for at least an hour to give the enzymes enough time to separate the mixture.
     
  • Create Cucumber Foam

    While the carrots are resting you can go ahead and make the cucumber foam.
     
    Mix the salt and Foam Magic together, Juice the cucumber and reserve 300 grams of the liquid.
     
    In a blender add the cucumber juice and turn on to medium high speed and slowly add the dry ingredients while it is spinning.
     
    Pass the cucumber juice through a fine mesh sieve and pour into a cream whipper, charge once, shake vigorously and reserve in the refrigerator.
     
  • Spin Cooked Carrots

    Once the carrot puree has sat for an hour or more you can spin it in the Spinzall 2.0 for 30 minutes in batch mode according to manufacturer’s specifications.
     
    When spinning is finished remove the rotor and carefully pour contents into a container with a very fine mesh strainer. It is important to use a very fine mesh strainer when straining the spun carrot juice. We use a 100 micron Superbag but a nut milk bag or coffee filter  would also do a good job.
     
  • Create Cocktail

    To make the cocktail add 2 parts clarified carrot juice (2 oz), 1 part vodka (1 oz), 1 drop of bitters and ice into the shaker cover and shake vigorously.
     
    Pour into shot glass and dispense cucumber foam from the whipper on top.
