Ingredients

  • 150g (â…“ Cup) Sugar
  • 10g (2 Tbsp) Coffee Bean Flour
  • 8g (½ Tbsp) Ground Cinnamon
  • 250g (1 Cup) Milk
  • 28g (2 Tbsp)  Butter
  • 3g (½ Tsp) Salt
  • ½ Stick Cinnamon
  • 4.5g (1 Tsp) Vanilla Extract
  • 1g (½ Tsp) Grated Nutmeg
  • 135g (1 Cup) All Purpose Flour
  • 15g (2 ¼ Tablespoons) Coffee Bean Flour
  • 2 Medium Eggs
  • 2 Quarts  (8 Cups) Vegetable Oil

  • Prepare Fry Oil and Sugar Coating

    Line a half sheet pan with with 3 layers of paper towels and set aside
     
    In a large pot heat the vegetable oil over medium high heat until it registers 350°F on the thermometer.
     
    Add all but 1 tablespoon of the sugar with the ground cinnamon and 2 tablespoons of coffee bean flour on a plate thoroughly combined.
     
  • Create Churro Batter

    In the medium heavy bottomed saucepan bring the milk, butter, salt, reserved tablespoon of sugar, vanilla extract, grated nutmeg and cinnamon stick to a boil over medium high heat. Turn off the heat and let it stand to infuse for 15 minutes.
     
    Remove the cinnamon stick and bring the mixture back to a boil over medium high heat. Add the flour while still on the heat and beat it with the wooden spoon until a smooth dough forms.
     
     Turn off the heat and add the dough to the stand mixer bowl and let it cool down for a few minutes. Add the eggs one at a time as you mix it at medium high speed.
     
  • Pipe and Fry Churros

    Spoon the dough into the pastry bag and begin to carefully pipe out 4 to 5 inch long churros into the hot oil while cutting the dough off with the scissors.
     
    Fry 5 to 6 churros at a time and let cook for  3 to 4 minutes until golden brown and transfer to the towel lined sheet pan to shake off excess oil.
     
    Transfer churros to cinnamon sugar mixture and coat well.
