Deconstructed Harvey Wallbanger

The Deconstructed Harvey Wallbanger re-imagines this classic from the ground up and offers a refreshing take that’ll be the talk of the party.

Ingredients

  • Orange Juice
  • 85g Vodka (3oz)
  • 7g Simple Syrup (¼ oz)
  • 2 Dashes of Orange Bitters
  • SIMPLE SYRUP:
  • 100g Sugar (8 Tbsp)
  • 100g Water (6¾ Tbsp)
  • HAND FOAM METHOD:
  • 50g Galliano (1⅔ oz)
  • 50g Water (1⅔ oz)
  • 1g Foam Magic (1tsp)
  • CREAM WHIPPER FOAM METHOD:
  • 230g Galliano
  • 230g Water
  • 4.6g Foam Magic

Equipment

  • Spherical Molds
  • Whipping Siphon or Magic Wand
  • Cream Whipper
  • N20 Cream Cartridge
  • Cocktail Stirrer
  • Serving Glass

Timing

Active Time: 10 minutes

Total Time: 10 minutes

Yield

Hand Foam Method: 5-7 Coctails

Cream Whipper Foam Method: 11-13 cocktails

  • Orange Ice Ball (Sphere)

    Simply pour the OJ into the sphere molds. Do not overfill as the liquid will expand when frozen.

    Freeze solid, should take about 2 hours. If you overfill the mold it will just make it difficult to get the ice out.

    Fill as many spherical mods as you have. If making many cocktails we suggest making the spheres ahead of time and store them in a zip top bag in the freezer until ready to use.

  • Prepare the Galliano Foam (Hand Method)

    If you’re using a Magic Wand for foaming, this method will give your a lighter more lacy foam. It’s better to use a smaller amount of liquid, that way you don’t have to work as hard to incorporate air into the mix.

    Mix together the Galliano, water, and foam magic in a container and begin foaming with the  magic wand. Position the magic wand so it is angled and 75% of the foamer is submerged and the other 25% is incorporating air into the mixture. This is how to generate the most foam using this method.

    The foam will remain stable until ready to use.

  • Prepare the Galliano Foam (Cream Whipper Method)

    This method will give you a more creamy foam. When using the cream whipper, be sure not to use an C02 charge as opposed to a N20 charge, which won’t give you the proper mouth-feel.

    Mix together the Galliano, water, and foam magic in a container and pour into a clean whipping siphon. Screw the top onto the whipping siphon and charge two N2O charges.

    The foam will remain stable until ready to use.

  • Simple Syrup

    Heat the water and sugar in a pot over medium high heat until it is completely melted and comes to a simmer.

    Cool and store until ready to make cocktails.

  • Make your Cocktail Base

    Pour your vodka, simple syrup, and orange bitters into a glass and add ice. Stirring the drink at this point is very important. When you stir here, the ice will melt just a tiny bit and dilute the drink. This is good! This could be the difference between a good cocktail and an amazing cocktail.

  • Make your Cocktail

    Once your drink has been stirred, you can strain it into your glass.

    Place your ice ball into the glass and finish with your foam. Fill your glass to the rim with foam for the best effect.

    Server your drink immediately so your guests can see the ice ball and water melt.

Which is the correct gas cartridge to use? The video states CO2 while the ingredients states N2O. Even the text in the instructions is confusing.
