No more stale store-bought freezer pizzas. This homemade frozen pizza is fresh and delicious! The perfect dough is achieved thanks to a surprise ingredient: Sodium Alginate, keeping the dough stretchy and helping with gluten development. Whether frozen for days, weeks, or even months, this pizza will taste like you just made it today.




  • 315 Grams (2 ½ Cups) Bread Flour
  • 15 Grams (2 ⅓  Tbsp) Sugar
  • 5 Grams (2 ½ tsp) Salt
  • 5 Grams (1 ¾  tsp) Instaferm Instant Yeast
  • 6.3 Grams (3 tsp) Diastatic Malt Powder
  • 0.6 Grams (¼ tsp) Sodium Alginate
  • 16 Grams (½ oz) Extra Virgin Olive Oil
  • 210 Grams (1 Cup) Lukewarm Water
  • 200 Grams (1 Cup) Preferred Pizza Sauce
  • 200 Grams (1 Cup) Mozzarella Cheese


  •  Food Processor or  Stand Mixer 
  •  Scale   
  •  Dough Cutter  
  •  3 each 1 Quart Containers with Lids or Ziploc Freezer Bags
  •  Half Sheet Pan   
  •  Parchment Paper
  •  Plastic Food Film


Active Time: 30 Minutes Total Time: 24 Hours


Three 8 inch Pizzas

  • Create Dough

     Add dry ingredients to processor or stand mixer and mix to combine.
     While the processor or stand mixer is running, add water and oil and mix until a dough ball forms, about 1 minute. Add the oil and water slowly while mixing so it incorporates consistently.
    Chef Tip: We suggest adding half of the water first, adding the oil, then add the rest of the water. This will help emulsify the oil and water together creating a smooth and elastic dough.
    Divide the dough into 3 equal parts and place each in separate containers.
    Refrigerate for at least 1 day and up to 3 days
  • Create and Freeze Pizzas

    Remove dough from the refrigerator and shape into balls.
    Let the dough ball rest at room temperature covered for 2 hours.
    Stretch your dough out to 8 inch pizza rounds and place on sheet pans with parchment paper.
    Spoon on the pizza sauce and add mozzarella cheese. Add the toppings of your choosing.
    Wrap the entire sheet pan in plastic wrap and freeze.
  • Bake Pizza

    To heat, place frozen pizza directly on the oven rack in the center of a preheated 425 degree Fahrenheit  oven for 15 minutes.
    Let it rest for 3 minutes then Enjoy.
