Fun and Funky Ketchups

Ketchup can go way beyond the standard bottle of red tomato stuff. Almost any flavorful paste can be ketchupfied in one simple step. We add in a small amount of xanthan and ultra-tex to give the ketchups just the right texture that’s going to last. Try popcorn, kimchi, or even beef jerky, they are just a few of our favorites. So go wild and make up your own!

Ingredients

  • Roasted Tomato Ketchup Ingredients:
  • 100g (3 tbsp + 2 tsp) Roasted Tomato Paste
  • 100g (¼ cup) Roasted Sun-dried Tomatoes
  • 200g (¾ cup + 2 tbsp) Vinegar
  • 200g (¾ cup + 2 tbsp) Sugar
  • 5g (1 tsp) Salt
  • 1g (¼ tsp) MSG
  • 0.6g (⅛ tsp) Perfected Xanthan Gum
  • 3g (1 tsp) Ultra-Tex-3 (or Ultra-Tex 4)
  • Roasted Banana Ketchup Ingredients:
  • 200g (¾ cup + 2 tbsp) Roasted Bananas
  • 15g (1 tbsp) Peanut Butter Powder
  • 200g (¾ cup + 2 tbsp) Vinegar
  • 200g (¾ cup + 2 tbsp) Sugar
  • 5g (1 tsp) Salt
  • 1g (¼ tsp) MSG
  • 0.6g (⅛ tsp) Perfected Xanthan Gum
  • 1.5g (½ tsp) Ultra-Tex 3 (or Ultra-Tex 4)
  • Popcorn Ketchup Ingredients:
  • 100g (3 tbsp + 2 tsp) Frozen Corn
  • 50g (¼ cup) Milk Powder, Toasted
  • 50g (¼ cup) Butter, Melted
  • 200g (¾ cup + 2 tbsp) Vinegar
  • 200g (¾ cup + 2 tbsp) Sugar
  • 7g (1 ½ tsp) Salt
  • 1.5g (¼ tsp) MSG
  • 0.6g (⅛ tsp) Perfected Xanthan Gum
  • 4g (1 ½ tsp) Ultra-Tex 3 (or Ultra-Tex 4)
  • Kimchi Ketchup Ingredients:
  • 200g (¾ cup + 2 tbsp) Kimchi
  • 200g (¾ cup + 2 tbsp) Vinegar
  • 200g (¾ cup + 2 tbsp) Sugar
  • 5g (1 tsp) Salt
  • 1.5g (¼ tsp) MSG
  • 1.2g (¼ tsp) Perfected Xanthan Gum
  • 6g (1 ¾ tsp) Ultra-Tex 3 (or Ultra-Tex 4)
  • Caramelized Onion Ketchup Ingredients:
  • 200g (¾ cup + 2 tbsp) Caramelized Onions
  • 200g (¾ cup + 2 tbsp) Vinegar
  • 200g (¾ cup + 2 tbsp) Sugar
  • 5g (1 tsp) Salt
  • 1g (¼ tsp) MSG
  • 0.6g (⅛ tsp) Perfected Xanthan Gum
  • 3g (1 tsp) Ultra-Tex 3 (or Ultra-tex 4)
  • Beef Jerky Ketchup Ingredients:
  • 200g (1 cup) Beef Jerky, Chunks or Sticks
  • 200g (¾ cup + 2 tbsp) Vinegar
  • 200g (¾ cup + 2 tbsp) Sugar
  • 0.6g (⅛ tsp) Perfected Xanthan Gum
  • 3g (1 tsp) Ultra-Tex 3 (or Ultra-Tex 4)

Active Time: 5 Minutes

Total Time: 5 Minutes

Yield

~ 600g Per Recipe

  • Prepare Ingredients

    Choose the desired ketchup recipe.

    Prepare all ingredients for ketchup. All items that need to be roasted/ toasted can be done in a 400°F oven for 10 minutes or until golden brown.

  • Create Ketchup

    Place all ingredients in a blender and blend until smooth between 1-5 minutes depending on the recipe.

    The flavors will meld together better over the corse of 24 hours.

    If stored in the refrigerator in a sealed container properly, this ketchup recipe can last up to 4 weeks.
