Ingredients

  • 150g (½ Cup) Ginger Peeled And Small Diced
  • 150g (½ Cup) Carrots Peeled And Small Diced
  • 200g (½ Cup) Pineapple Peeled And Small Diced
  • 250g (1 Cup) Unsweetened Apple Juice

Equipment

  • Blender / PacoJet / Spinzall
  • Fine mesh Strainer

  • Blender Method

    Best method for peeling ginger is using a spoon as it will easily get around and under all the knobs that ginger has as well as just scraping off just the skin and not the actual ginger. Make sure that you are using a very ripe pineapple as it will help balance the bitterness of the ginger with its sweetness.
     
    Put all the ingredients in the blender and blend on medium high speed for the first minute and turn the speed up to high for the remaining 3 to 4 minutes.
     
    Pour the puree through a fine mesh strainer into another container and use the back of a spoon or ladle to help push the liquid through.
     
    You can enjoy it now or if you are going to run it through the centrifuge just pour the puree into the Spinzall rotor and spin it for 30 minutes, up to an hour and then pass through a mesh strainer.
     
  • Pacotize Method

    Place all the ingredients except the apple juice into the PacoJet beaker and pour the apple juice over and freeze overnight.
     
    Pacotize the beaker in the PacoJet 6 times with the overpressure disabled.
     
    Let the Pacotized beaker stand at room temperature until it has melted.
     
    Pass the ginger shot through a fine mesh strainer and enjoy.
     
  • Spinzall Method

    You can also clarify the ginger shot in the Spinzall for an even more refined and balanced flavor profile.
     
    Fill the rotor on batch mode to the fill line. Spin for at least 20 minutes, up to 1 hour for clearest results.
     
    Pass the ginger shot through a fine mesh strainer and enjoy.
