Green Scallion Dressing

Polysorbate 80
This green scallion dressing adds a splash of color and sweet, grassy flavor to brighten up the any recipe. Polysorbate 80, a super emulsifier, keeps it all from breaking so everything stays together and smooth.

Ingredients

  • 190g (~2 bunches) Scallions
  • 35g (2 tbsp ¼ tsp) Sugar
  • 60g (¼ cup) Lime Juice
  • 40g (1 medium egg) Egg
  • .3g (⅛ tsp) Polysorbate 80
  • 5g (1 tbsp) Ground Black Pepper
  • .5g (¼ tsp) Cayenne
  • 4g (¾ teaspoon) Salt
  • 500g (1 pint) Vegetable Oil

Equipment

  • Small Heavy Bottom Pan
  • Whisk
  • Blender

Timing

Active Time: 5 Minutes

Total Time: 10 Minutes

Yield

4 Servings Lobster
8 Servings Dressing

  • Combine Ingredients

    In a Blender, combine the scallions, sugar, lime juice, egg, polysorbate 80, black pepper, cayenne and salt. Blend until smooth.

  • Emulsify Oil

    Keep the blender on low speed and slowly add the oil in a thin steady stream until all combined and emulsified. Refrigerate until needed.

    Serve on your favorite dishes. We recommend our Buerre Blanc Poached New England Lobster Roll
