Ingredients
- Bloody Mary Mixer:
- 681g (1 ½ lb) Tomatoes, for Juice
- 120g (4 oz) Carrot, for Juice
- 60g (2 oz) Beet, for Juice
- 60g (2 oz) Celery, for Juice
- 30g (1 oz) Worcestershire Sauce
- 90g (3 oz) Lemon Juice
- 20g (1 Tbsp + 1 tsp) Prepared Horseradish
- 6g (2 tsp) Black Pepper, Cracked
- 1g (1/4 tsp) Hot Sauce Powder
- (plus more for garnish)
- 7.5g (2 tsp) 210S
- 2.5g (½ tsp) Salt
- 15g (1 ½ tbsp) Paprika
- 3g (1 tsp) Celery Seed
- 45g (3 tbsp) Brown Butter
- 45g (3 tbsp) Bacon Drippings
- Cocktail Mix:
- 45g per cocktail (1 ½ oz) Vodka or Tequila
- Celery Stalks for Garnish
- Crispy Bacon for Garnish
- Olives for Garnish

Prepare Vegetables
Remove any stems from the tomatoes and peel the carrot and beet.
Use a juicer to juice all the vegetables. Skim any foam from the juicing process.
Place the juice in the blender and add the Worcestershire sauce, lemon juice, and prepared horseradish.

Prepare Fat and Dry Ingredients
Gently heat the bacon fat and browned butter just until it has melted.
In a separate container dry mix together the black pepper, hot sauce powder, 210s, salt, paprika, and celery seed.

Blend Ingredients
Blend the juice on low speed and add in the dry mixture.
Blend for 1 minute before slowly adding the brown butter and bacon fat.
Blend until smooth and place in a sealed container for up to 2 weeks.
You may see very mild separation after 5 days but a quick shake will bring everything back together.

Create Cocktail
To make a cocktail add 45g (1 ½ oz) of vodka or tequila to a shaker cup with ice add 4-8 oz of the bloody mary mixer depending on your preference. Shake the cup for 10-20 seconds and strain into a rocks glass. Garnish with hot sauce powder, olives, crispy bacon, and a celery stalk.
Serve immediately.

2 questions: can you use Worcestershire powder instead of liquid and do you have a powdered form of bacon or bacon fat?
You can use what ever ingredients you want to flavor this Bloody Mary mix. We don’t currently have any bacon powder or bacon fat powder, but if you have some or can find some you can absolutely use it in this!
