We’ve finally developed a keto biscuit that will leave breakfast lovers shouting for more! This keto biscuit is tall, light, and fluffy, and is risen with the help of I’m Free Perfect Baking Powder. Gluten Replacement is added to help the biscuit crumb structure stay airy and light. Try our Keto Breakfast sandwich or simply slather with butter and enjoy.

Ingredients

  • Keto Biscuits:
  • 200 g (1 ½ cup) Almond Flour 
  • 1.6 g (1 ½ tsp) Baking Powder 
  • 1.6 g (1 ½ tsp) IM FREE Baking Powder 
  • 7.3 g (1 tbsp 1 tsp) IM FREE Gluten Replacement
  • 25 g (3 tbsp) Expandex Gluten Free Starch 
  • 0.6 g (â…› tsp) Xanthan Gum 
  • 56.5 g (¼ cup) Cold Butter
  • 30 g (1 each) Egg Whites
  • 135 g (½ cup) Buttermilk
  • * + one Egg White, to Wash
  • * + 2 tbsp Butter, to Butter Baking Tray/ring Molds

  • Rubber spatula 
  • Stand mixer with paddle attachment / electric mixer 
  • 3 ring molds 
  • Baking sheet 
  • Pastry brush

  • Prepare Dough

    In a medium bowl combine almond flour, baking powder, IM FREE baking powder, expandex, and xanthan. Whisk to combine.
     
    Cut cold butter into small cubes and add into dry ingredients. Using the paddle attachment on the stand mixer, break the butter apart until it is incorporated and the mixture resembles wet sand.
     
    In a stand mixer fitted with a whisk attachment, whisk the egg white until stiff peaks form.
     
    Add the buttermilk to the butter/dry ingredients and stir to combine. Fold in the whipped egg whites.

 

  • Bake Biscuit

    Turn the oven to 350 F. On a baking sheet, cover with parchment paper and butter the parchment paper.
     
    Place buttered ring molds on the baking sheet.
     
    Fill each ring mold half way with batter (roughly 150 g) and smooth the top.
     
    Using a pastry brush, brush the tops with egg whites.
     
    Put in the oven and bake for 20-25 minutes; until the tops are golden brown and a toothpick comes out clean.
     
    Serve this as a great keto breakfast sandwich with your favorite toppings, or as a side with your dinner!
