Prepare Dough
In a medium bowl combine almond flour, baking powder, IM FREE baking powder, expandex, and xanthan. Whisk to combine.ÂCut cold butter into small cubes and add into dry ingredients. Using the paddle attachment on the stand mixer, break the butter apart until it is incorporated and the mixture resembles wet sand.ÂIn a stand mixer fitted with a whisk attachment, whisk the egg white until stiff peaks form.ÂAdd the buttermilk to the butter/dry ingredients and stir to combine. Fold in the whipped egg whites.

Bake Biscuit
Turn the oven to 350 F. On a baking sheet, cover with parchment paper and butter the parchment paper.ÂPlace buttered ring molds on the baking sheet.ÂFill each ring mold half way with batter (roughly 150 g) and smooth the top.ÂUsing a pastry brush, brush the tops with egg whites.ÂPut in the oven and bake for 20-25 minutes; until the tops are golden brown and a toothpick comes out clean.ÂServe this as a great keto breakfast sandwich with your favorite toppings, or as a side with your dinner!
