- 2000g (½ gallon) Neutral Flavored Oil
- 50g (¼ Cup + 2 Tbsp + 1 tsp) Faba Bean Protein Concentrate
- 100g (2 each) Large Eggs
- 50g (¼ Cup + 1 Tbsp) Almond Flour
- 10g (1 Tbsp + 1 ½ tsp) EverCrisp
- 2.5g ( ½ tsp) Baking Powder
- 5g (1 tsp) Salt
- 7.2g (1 Tbsp) Methocel E4M
- 200g (¾ Cup + 1 tbsp) Seltzer Water
- 50g (¼ cup) Egg White Powder
- 908g (2 lbs) White Fish, Cut as Desired (Cod, haddock, halibut, etc)

Prepare Fish and Batter
In a pot, preheat the oil to 325°F. We fry this batter at a lower temperature to prevent the high protein batter from burning.On paper towels pat dry the white fish filets as well as possible.In a mixing bowl, combine the faba bean protein concentrate, almond flour, evercrisp, baking powder, salt and the Methocel E4M and whisk together until combined.Add the seltzer water to the remaining mix and whisk until combined and not lumpy.Evenly coat the fish in the egg white powder. Remove from the egg white powder and place in the batter and coat evenly.Use a skewer to remove the fish from the batter.

Fry and Serve
Place in hot oil and use another skewer to slide the fish off of the first skewer. Fry for 2 minutes per side or until golden brown.With a slotted spoon or tongs, remove the fried fish and place on a paper towel.Allow any excess oil to drip off and serve immediately.
