- 40g (5 Tbsp) Ultratex 3
- 8g (½ Tbsp) Salt
- 0.5g (¼ tsp) Black Pepper, Ground
- ½ sprig Rosemary
- ½ sprig Thyme

Infuse
In a sauce pan place the chicken stock, salt, black pepper, rosemary, and thyme.
Bring to a simmer and allow to cook for 10 minutes.

Strain the infused stock with a fine mesh strainer or superbag into a separate container.
Using a hand blender, slowly blend the Ultratex 3 until the mixture is smooth and slightly thickened.
