Make Ahead Gravy

Tired of rushing around like a mad chef on Thanksgiving? This make ahead gravy will change your life. Seriously, you can refrigerate it, freeze it, thaw it, and it still tastes like you made it that morning. Rescue yourself from a Thanksgiving headache with Ultra-Tex.

 

Ingredients

  • 1000g (1 quart) Chicken Stock
  • 40g (5 Tbsp) Ultratex 3
  • 8g (½ Tbsp) Salt
  • 0.5g (¼ tsp) Black Pepper, Ground
  • ½ sprig Rosemary
  • ½ sprig Thyme

Equipment

  • Sauce Pan
  • Hand Blender
  • Superbag (optional)
  • Control Freak (optional)

Timing

Active Time: 10 minutes

Total Time: 10 minutes

Yield

1 Quart

  • Infuse

    In a sauce pan place the chicken stock, salt, black pepper, rosemary, and thyme.

    Bring to a simmer and allow to cook for 10 minutes.

  • Strain

    Strain the infused stock with a fine mesh strainer or superbag into a separate container.

    Using a hand blender, slowly blend the Ultratex 3 until the mixture is smooth and slightly thickened.

  • Serve

    Serve immediately or cool and store for up to 7 days.
