Cook Ingredients
Prepare an immersion circulator to 83°C, 181.4°F.

Combine the polenta, liquids, butter, and salt in a vacuum pouch and vacuum seal it.

Place the sealed polenta into the immersion circulator and cook for 1 hour. After 1 hour, carefully massage the bag to redistribute the ingredients. Be sure to work out any large clumps.Â

Place the polenta back into the immersion circulator. Cook for the remaining 15 hours.
