Naturally Green Tortillas

This homemade tortilla is tinted green with superfood spirulina and perfected with a little sodium alginate to give it that extra stretch. Pair with our corned beef and cabbage for an special St Patrick’s Day taco!

Ingredients

  • 160g (1 ½ Cup) Masa Harina Flour
  • 70g ( ½ Cup) AP Flour
  • 275g (1 â…› Cup) Warm Water
  • 2g (½ Tbsp) Kosher Salt
  • 1g ( ½ Tsp) Sodium Alginate
  • 3g (1 Tbsp) Spirulina

  • Create Dough

     In a large mixing bowl whisk the masa harina, flour, spirulina, sodium alginate and the salt for one to two minutes to combine.
     
    Important: Make sure to to mix the dry ingredients thoroughly to make sure the alginate is mixed into the flour to avoid clumps.
     
    Once mixed,  gradually add the warm water while stirring with the rubber spatula until the dough is evenly mixed and comes off the side of the bowl.
     
     Knead for 2 to 3 minutes until a smooth and cohesive ball forms. Dough should feel firm and springy. Cover the dough and let it rest for 15 minutes.
     
    Use dough immediately after you make it or refrigerate for a maximum of 3 days. I recommend cooking the dough the day you make it.
     
  • Press Tortillas

    Portion the dough into 2 tablespoon (30 grams) balls and roll them into balls.
     
    Press a dough ball between two pieces of food film in the tortilla press and gently press into a 4 to 5 inch tortilla.
     
  • Cook Tortillas

    Heat a nonstick skillet over medium-high heat.
     
    Once pan is heated  peel plastic wrap gently from tortillas and lay into hot skillet.
     
    Chef Tip: We recommend pressing one tortilla as you cook one in a cycle until all the tortillas are cooked.
     
    Cook tortillas for 40-60 seconds until it starts to slightly brown. Flip the tortilla over and cook for an additional 30-40 seconds.
     
    Once cooked, transfer to a tortilla warmer or a bowl wrapped in plastic wrap.
