Reconstitute Egg White Powder
Place the egg white powder and water in the stand up mixer.
Using the whisk attachment, whisk until it becomes frothy.

Slowly sprinkle in the sugar until it’s all incorporated.
Place the mixer on med high speed and whisk for 10 minutes or until the sugar is dissolved and the whites are stiff peaks.
