Easy Pasteurized Meringue

Make fresh meringue in minutes from pasteurized egg white powder. Say goodbye to broken egg yolks and food waste. Use only what you need and store the rest in the pantry, it’s that easy.

Ingredients

  • 14g (2 Tbsp) Egg White Powder
  • 106g (½ Cup + 2 Tbsp) Water
  • 130g (½ Cup + 1 Tbsp) Sugar

Equipment

  • Stand Mixer with Whisk Attachment

Timing

Active Time: 5 Minutes

Total Time: 10 Minutes

Yield

~ 1 Quart

  • Reconstitute Egg White Powder

    Place the egg white powder and water in the stand up mixer.

    Using the whisk attachment, whisk until it becomes frothy.

  • Whip in Sugar

    Slowly sprinkle in the sugar until it’s all incorporated.

    Place the mixer on med high speed and whisk for 10 minutes or until the sugar is dissolved and the whites are stiff peaks.

    Use immediately.
