This homemade caesar dressing is balanced and complex in flavor. It is completely plant-based for a vegan and vegetarian friendly meal. Top it with homemade seitan and you have yourself a plant-based chicken caesar salad! The dressing is tart and salty thanks to lactic acid and kelp powder. We emulsify oat milk and oil with 210S to create a stable and creamy dressing.

Create Dressing
In a blender add oat milk, nutritional yeast, dijon, garlic, lactic acid, kelp powder, salt, and pepper. Blend until smooth.Drizzle in oil slowly to create an emulsion.After the oil is added in, sprinkle 210S into the blender on a low speed.When fully combined, the dressing is ready.

Create Seitan
In a nonstick bowl mix together the vital wheat gluten, whole wheat flour, salt, garlic powder, onion powder, and white pepper.Add the coconut oil and cut it into the vital wheat gluten until it forms pea sized pieces.Add the water and mix until it forms a mass. Remove from the bowl and knead for 5 minutes.Using a rolling pin to help form the seitan into a 1 inch thick portion. Simmer vegetable broth and poach the seitan in the broth for 25 minutes.Remove from the broth and pat dry with paper towels. Cover and refrigerate until needed.Slice to serve. Optionally grill poached seitan, using a Power Smokeless Grill set to 400°F. Sear seitan on both sides for 5 minutes or until grill marks appear. Serve slices on top of caesar salad.

Plate Salad
In a large bowl add in chopped romaine lettuce and croutons.Drizzle plant based caesar salad dressing over the lettuce and toss to combine.Serve the salad with grilled seitan and optional plant based parmesan cheese and enjoy!
