Red Hot Fireball Ice Cream Base

Red Hot fireball ice cream! Need we say more? This fireball ice cream will be an instant hit on a hot summer day, with a kick. Our very own perfect ice cream keeps those ice shards away, so you can relax and enjoy!

Ingredients

  • 4g (1½ tsp) Perfect Ice Cream
  • 200g (¾ cup) Sugar (split into 2 measurements 30g and 170g)
  • 600g (2½ cups) Milk
  • 400g (1 ¾ cups) Heavy Cream
  • 120g (½ cup) Fireball Cinnamon Candies
  • 100g (¾ cup + 2 tbsp) Egg Yolk Powder
  • .5g (1 small pinch) Salt
  • 120g (½ cup) Water
  • 45g (1½ oz) Cinnamon Whisky

Equipment

  • Heavy Bottomed Pot
  • Whisk
  • Ice Cream Churn

Timing

Active Time: 15 Minutes

Total Time: 30 Minutes

Yield

2 Cups

  • Heat Milk Mixture

    Dry mix the Perfect Ice Cream and 30g of sugar together.

    In a pot add the milk, cream, fireball candies and sugar/Perfect Ice Cream mixture.

    Whisk well and begin heating on low. Allow the cinnamon candies to fully dissolve before bringing the mixture to a simmer. If the cinnamon candies are not providing enough color you can add some red food coloring.

  • Create Egg Mixture & Temper Eggs

    In a separate bowl add the egg yolk powder, water, and sugar. Mix well.

    Once the milk mixture has been fully heated slowly temper it into the egg mixture. Do this by pouring it slowly into the bowl of eggs while constantly whisking.

    Once the mixture has been fully combined add the cinnamon whisky and mix well.

  • Cool & Store

    Cool this ice cream base completely before moving on.

    This ice cream base can be churned in any conventional ice cream machine to create a great ice cream for you to enjoy!
