Finely dice the pickled cucumbers or place them in a food processor and pulse until they reach the desired texture.
Pour the pickled cucumber brine into a blender and begin blending on medium speed. Slowly sprinkle in the xanthan gum. Blend for 2 minutes on medium high.
Pour the brine back into the diced cucumbers and mix well.
Place the relish into a sealed container and refrigerate until ready for use.
