Ingredients

  • Nugget Ingredients:
  • 200g (2 Cups) Shrimp Peeled and Deveined
  • 10g (1 ½ Tbsp) Ultra-Stik
  • 4g (1 tsp Mirin
  • 1.5g (½ tsp) Salt
  • 1g (¼ tsp) Sesame Oil
  • 2 Quarts Canola Oil
  • Breading Ingredients:
  • 2 Eggs
  • 150g (1 ¼ Cup) All Purpose Flour
  • 50g (½ Cup) Panko Bread Crumbs

  • Medium Saucepan
  • Rubber Spatula
  • 3 Medium Shallow Bowls

  • Prepare Breading

    Add separately in the 3 shallow bowls 2 eggs whisked, flour, panko bread crumbs and reserve.
     
    Mix the dry ingredients together and reserve.
     
  • Prepare Shrimp

    Pulse the shrimp in a food processor 2 times. While pulsing add the mirin and sesame oil.
     
    Sprinkle the dry mix on top of the shrimp and pulse a few more times to combine. Do not over-mix.
     
    Scoop the shrimp mixture into a bowl using a rubber spatula.
     
  • Mold, Batter, and Fry Shrimp

    Form the shrimp into nuggets and set in the freezer for a few hours until the nuggets have frozen hard enough to easily handle and bread.
     
    Fry breaded shrimp nuggets at 350°F for 4 minutes.or until golden brown.
