Wrap yourself in the warm delicious flavors of fall with this deeply flavored cider cocktail infused with applewood smoke. The Breville|PolyScience Smoking Gun and Alice and the Magician elixirs are an unbeatable combo for heightening the olfactory pleasures of any beverage.

Ingredients

  • 500g (1 pint) Apple Cider
  • 45g (1 ½ oz) Cognac
  • 30g (1 oz) Calvados
  • 15g (½ oz) Sweet Vermouth
  • 7.5g (¼ oz) Bourbon
  • 15g (½ oz) Grade A Maple Syrup
  • 4-5 Drops Alice and the Magician Spice Trade Elixir
  • 1 Cinnamon Stick

Equipment

  • Large Sauté Pan
  • Smoking Gun with Apple Wood Chips
  • Torch

Timing

Active Time: 5 Minutes

Total Time: 15 Minutes

Yield

1 Cocktail

  • Smoke Apple Cider

In a large sauté pan place the apple cider. Cover the sauté pan tightly with plastic wrap. Do this on an induction burner. If you don’t have access to an induction burner use electric or gas burners on medium low.

Tie some butchers twine around the pan. Before it is tightened, lift a corner of the plastic wrap just enough to place the nozzle of a smoking gun into the pan.

Light the apple wood chips in a smoking gun and fill the plastic wrap with a dense smoke. Seal the pan with the plastic wrap and tie it off.

Place the pan over medium heat and bring it to a simmer. Simmer for 5 minutes and then turn the heat off. Allow it to sit for 10 minutes or until the steam dissipates. Remove the plastic wrap and the cider is ready to use.

  • Mix Cocktail

Add the 2oz of the warm cider to a mixing glass, save the rest for more cocktails. Add the cognac, calvados, sweet vermouth, bourbon, grade A maple syrup and stir until mixed.

Place the cocktail into a glass and add 4-5 drops of Alice and the magician spice trade elixir.

Char the end of a cinnamon stick and stir the cocktail with the charred end.

    Serve Warm and enjoy!

Questions on the spirits used. 🙂
There are a lot of grades of cognac. Did you use a name brand? VS, VSOP, XO (no categorization)
Similarly there is a wide range of ABV in bourbons. Did you use a 80 proof? ~100? Or higher?
