If you’re in the mood for a cocktail that evokes brooding noir nights, the Smoked Black Manhattan was concocted for just such a time. The scent of smoked cherry wood coupled with the aromatic, bittersweet notes of Averna lingers just so… so put on your favorite jazz record and enjoy.
Ingredients
- 90g (3 oz) Rye Whiskey
- 45g (1 ½ oz) Averna
- 2 Dashes Rye Bitters
- 2 – 3 Fabbri Amarena Cherries, For Garnish

Stir Cocktail
In a shaker cup place 10 ice cubes, add the rye whisky, avera, and 2 dashes of bitters.
Stir the cocktail for 5 seconds and strain it into a chilled coupe glass. Garnish with a skewer of fabbri cherries. Make sure the cherries are included in the smoking step as they will pick up a lot of the aroma.
The colder the cocktail and glass the better the presentation of the smoke will be.

Smoke Cocktail & Serve
Place the cocktail under a cloche and use a smoking gun to create a dense smoke. Allow the cocktail to smoke for 5-10 seconds before removing the cloche. The cold drink and glass will allow the cold smoke to linger on the liquid making for a great presentation.
Serve immediately.
