7 Four Ounce Cocktails
Combine the Water, 25g of the Bourbon and Sugar in a small heavy bottom pan and bring to a simmer.
Remove from the heat and add the Mint Sprigs and let steep for 15 minutes or until cool.
Remove the mint and squeeze out any additional liquid into the pot.
Whisk in the flavor drops and Instagel until combined.
Return to the heat and bring to a simmer.
Remove from the heat and with a spoon skim any impurities from the top, then whisk in the remaining bourbon.
Pour into your Cornstarch dusted molds, and refrigerate for 30 minutes.

You mention Instagel in the ingredients and gellan gum f in the recipe. Can I use gellan gum instead to make this vegetarian? And if so how much should I use?

Sorbitol acts a sweetener in this recipe. You could substitute it for table sugar and the recipe would still work.

Do I need to add water for instagel to work? Could I use say, 100% Kahlua to make gummies?

Yes, you should add some water to this. Dilute the Kahlua 50% with water to ensure the instagel works properly.

If using table sugar, does the quantity need to be reduced to reflect the increased sweetness vs sorbitol? If so, any recommendations?

You can use sugar as a one to one replacement if you wanted to, but if you wanted to have the sweetest be a little less intense you could reduce the amount of sugar by 20%. That should give you around the same relative sweetness. Let us know how it goes.
