Ingredients

  • 325g ( 1 ½ Cup) Pork Shoulder Diced
  • 170g (Âľ Cup) Smoked Ham Diced
  • 150g (â…” Cup) Pork Belly Diced
  • 5g (1 Tbsp) Cornstarch
  • 6g (1 Tbsp) Potato Starch
  • 8g (½ Tbsp) Salt
  • 5g (½ Tbsp) Sugar
  • 8g (½ Tbsp) Prague Powder 1
  • 1.5g (½ tsp) Sodium Tripolyphosphate
  • 50g (ÂĽ Cup) Ice Water

30 Mini Spam Bowls

  • Grind Pork

    Put the diced pork on a pan or plate and put it in the freezer for 1 hour minutes and mix the dry ingredients until combined.
     
    Ground the cold diced pork through the meat grinder into a bowl.
     
  • Season and Mix Pork

    Put the ground meat into the bowl of the food processor and pulse while slowly adding in the dry ingredients until combined.
     
    Once combined you can slowly stream in the cold water while pulsing until fully incorporated.
     
    Put seasoned ground pork in a vacuum bag and seal at the highest setting.
     
    Let the vacuum sealed pork cure in the refrigerator for 2 days.
     
  • Create Spam Cups

    Set up the sous vide bath at 72° Celsius or 161.6° Fahrenheit.
     
    After two days remove the now cured ground pork from the fridge.
     
    You will need two 1 oz glass bowls for each cup. Using clear glass bowls allows you to see the spam being spread whereas using a bowl you could not see through would yield inconsistent results.
     
    Portion out 20 grams of the ground pork and roll it into a ball. Line the inside of one bowl with food film and put in the ball of pork. Rubbing a little vegetable oil in your palms makes it easier to roll the ground pork into balls, otherwise it can be quite tacky. Put another square of food film on top and gently push the second bowl on top until it slowly spreads the pork evenly in the bottom bowl.  Pull down the food film tight over the rim of the bowl to prevent the pork from spilling out
     
     Vacuum seal the prepared bowls and place in the sous vide bath and cook for one hour.  After one hour remove the bowls from the sous vide and cool them down in an ice bath.
     
     When the bowls have completely cooled down,  cut open the bag and remove the bowls. Pull up the food film gently to remove the spam cups from the bowl.
  • Prepare Bowls

    These spam bowls are perfect for unique canapés and appetizers. We made poke bowl inspired dishes filled them with sushi rice, crispy shallots and garlic, and pickled veggies. You can use them with what ever filling you would like.
     
    You can also create larger spam bowls by doing the same process when creating the spam cups with larger matching bowls.
