Ingredients
- Cucumber Syrup Ingredients:
- 3 ripe Cucumbers (3 should be enough if they are ripe)Â
- 120g (½ cup) WaterÂ
- 120g (½ cup) Sugar
- Cocktail Ingredients:
- 90ml (3oz) Cucumber Simple Syrup
- 45ml (1 1/2oz) Pineapple JuiceÂ
- 30ml (1oz) Lime JuiceÂ
- 80ml (2 2/3oz) WaterÂ
- Ice
- 2-3 drops of Thai Herbs Elixir
- 2 Mists of English Cucumber Mist
- 1 Cucumber Ribbon for Garnish

Create Cucumber Syrup
Combine sugar and water into a small saucepan over medium-high heat. Bring to a boil, continuously stirring until the sugar dissolves. Then set aside to cool for about 30 minutes.
Chop the cucumbers and add them to a blender (keep the skin on them this will add to the green color).
Add the simple syrup to the blender and blend well.
Allow to sit for 24 hr and then strain the mixture to remove any solids.

Create Mocktail
Fill a cocktail mixing glass with ice.
Combine the cucumber simple, water, pineapple juice and Lime juice into the glass and stir.
Drop 2 to 3 drops of the Thai Herb Elixir and stir.
Strain the mocktail mixture into a clean whipping syphon to remove ice.

Carbonate in Siphon
Charge once with 1 Co2 charge, and release the pressure.Â
Charge a second time with 1 Co2 charge. Shake well. Release pressure before serving.

Pour and Serve
Pour the carbonated mocktail into a stemless wine glass or glass of your choosing.
Add two mist sprays of the English Cucumber Mist. Be sure to spray from 5-6 inches away from the rim of the glass. This gives the cocktail a bright cucumber aroma enhancing the drinking experience.
Garnish with a cucumber ribbon and serve immediately.
