Ingredients
- Pear Purée Ingredients:
- 3 Pears
- 30ml Lemon Juice
- 3 Sprigs Fresh Rosemary
- Rosemary-Clove Simple Syrup Ingredients:
- 120g ( 1/2 cup) Sugar
- 120g ( 1/2 cup) Water
- 30g (3 tbsp) whole cloves
- 3 Sprigs Rosemary
- Cocktail Ingredients:
- 45ml (1 1⁄2 oz) Gin
- 45ml (1 1⁄2 oz) Pear Purée
- 22ml ( 3/4 oz) Rosemary-Clove Simple Syrup
- 22ml ( 3/4 oz) lemon Juice
- 30ml ( 1 oz) Dry Sparkling Wine to Top
- 1 Sprig Rosemary, to Garnish
- 2 mist of Chinese 5 Spice
- 2 mist of Rosemary Honey

- Small Heavy Bottom Saucepan

Yield
1 Cocktail, ¾ cup Pear Purée, 1 Cup Rosemary-Clove Simple Syrup

Create Pear Purée
Peel & de-core the pears. Slice the pears and combine with lemon juice and rosemary in a blender.
Blend until smooth.
Gently strain mixture through a strainer to remove any solids. Store in fridge until needed.

Create Rosemary-Clove Simple Syrup
Combine the sugar, water, cloves, and rosemary in a saucepan over low heat, stirring occasionally. When it reaches a boil, remove from heat.
Let it sit for 30 minutes too cool.
Strain mixture through a strainer to remove any solids. Store in fridge until needed.

Create Cocktail
Combine the purée, rosemary-clove syrup, lemon juice, and gin in a cocktail shaker over ice. Shake vigorously. until chilled.
Pour into a rocks glass with fresh ice. Top with sparkling wine.
Garnish with rosemary.
Finish with 2 spray each of the Chinese 5 Spice mist and the Rosemary Honey mist. Serve and enjoy!
