1 Cocktail, ¾ cup Pear Purée, 1 Cup Rosemary-Clove Simple Syrup
Peel & de-core the pears. Slice the pears and combine with lemon juice and rosemary in a blender.
Blend until smooth.
Gently strain mixture through a strainer to remove any solids. Store in fridge until needed.
Combine the sugar, water, cloves, and rosemary in a saucepan over low heat, stirring occasionally. When it reaches a boil, remove from heat.
Let it sit for 30 minutes too cool.
Strain mixture through a strainer to remove any solids. Store in fridge until needed.
Combine the purée, rosemary-clove syrup, lemon juice, and gin in a cocktail shaker over ice. Shake vigorously. until chilled.
Pour into a rocks glass with fresh ice. Top with sparkling wine.
Garnish with rosemary.
Finish with 2 spray each of the Chinese 5 Spice mist and the Rosemary Honey mist. Serve and enjoy!
