Introducing the Spicy, Smoky, Pineapple Margarita. This cocktail is lovingly crafted with lime adjusted pineapple juice for the perfect acidity, pineapple infused tequila, spicy mexican hot sauce foam, and topped with a smoke bubble. Talk about “Wow” factor!

Ingredients

  • Pineapple Infused Tequila:
  • 80g Dehydrated Pineapple Peel (120°F / 12 hrs)
  • 160g / 6 fl oz Gold Tequila (Reposado, or your preferred brand)
  • Spicy Pineapple Foam:
  • 200g Freshly Extracted Pineapple Juice
  • .5 fl oz Ancho Reyes Red Chile Liqueur
  • .25 fl oz Mexican hot sauce (Cholula preferred)
  • 5g Sugar
  • 1g Coarse kosher salt
  • 1.6g Foam Magic
  • Lime Adjusted Pineapple Juice:
  • 100ml Freshly extracted pineapple juice (peel reserved)
  • 3.2g Citric Acid
  • 2g Malic Acid
  • Cocktail Assembly:
  • 1.5 fl oz Pineapple Infused Tequila
  • .5 fl oz Del Maguey Vida Mezcal
  • .75 fl oz Lime-Adjusted Pineapple Juice
  • .75 fl oz Cointreau
  • .25 fl oz Agave Nectar
  • Ice, as Needed

6fl oz Pineapple Infused Tequila 100ml Lime-Adjusted Pineapple Juice ~210g of Spicy Pineapple Foam 1 Cocktail

  • Create Pineapple Infused Tequila

    Using a sharp knife, remove the top from the pineapple and discard. Carefully remove the outer bark of the pineapple. Save the core of the pineapple for later use.
     
    Place the pineapple peels in a dehydrator sent to 120°F for 12 hours. While dehydrating, you can proceed to creating the pineapple foam and lime adjusted pineapple juice.
     
    Once the pineapple peels are dehydrated, place them in a vacuum pouch with tequila, seal and sous vide at 63°C (145°F) for 2 hours.
     
    After 2 hours, transfer the vacuum bag to an ice bath to fully chill before opening and straining off the liquid. Reserve the pineapple peel.
     
    In a citrus press, squeeze the pineapple peel to extract as much liquid as possible. Add this to the tequila.
     
    strain the infused tequila through a fine mesh strainer and reserve in the refrigerator until needed.
     
    Tip: If your pineapple is under-ripe, this recipe will not yield great flavor and straight Reposado Tequila should be substituted in the cocktail recipe.
 
  • Create Spicy Pineapple Foam

    In a mixing bowl, whisk all ingredients together. Once fully combined, using a funnel pour the mixture into a whipping siphon.
     
    Charge the whipper with one N2O cream charge. Shake vigorously to distribute the gas into the mixture.
     
    Reserve in the refrigerator until needed.
 
  • Create Lime-Adjusted Pineapple Juice

    In a mixing bowl, whisk all ingredients together. Reserve in the refrigerator until needed.
     
    Why Acid Adjust? Acid adjusting pineapple juice to match the acidity of lime juice is a technique that allows you to achieve the desired tartness in cocktails without introducing the distinct lime flavor. This process gives you greater control over the flavor profile of your cocktail.
 
  • Create Cocktail

    In a cocktail shaker, fill half way with ice. Add all cocktail ingredients to the shaker and shake hard until fully chilled and diluted.
     
    Double strain the cocktail into a chilled rocks glass or serving glass of your choice.
     
    Garnish the cocktai with spicy pineapple foam.
     
    For added presentation, create a smoke filled smoke bubble on top of the cocktail using the Breville Smoke Bubble Kit attachment to the Breville Smoking Gun.
