1 Dessert Sushi Roll

  • Create Rice Pudding Roll and Simple Syrup

    Put a sheet of plastic food film on your work station and spoon in the cooled rice pudding.
     
    Roll the rice pudding into a tight cylinder that is about 1.5 in diameter and refrigerate.
     
    To make the simple syrup add water to the medium saucepan and bring to a simmer. Add sugar to the pan and whisk until it is completely dissolved. Cool in the refrigerator before using in this recipe.
     
    Chef Note: If you are using your favorite rice pudding make sure it is housemade and not store bought because you will need a pudding that stiffens up when cooled to be able to roll it into a cylinder shape.
     
  • Create Strawberry Mixture

    Dry mix the agar and tapioca starch.
     
    Add 200 grams of the simple syrup to the blender add 200 grams of hulled strawberries and blend on med high for 2 minutes.
     
    While the blender is still running slowly sprinkle in the dry mix and turn up to high for 1 minute.
     
    Pour the mixture in the medium saucepan and while whisking bring it up to the boil to activate the Agar.
     
    Immediately pour the mixture between the two molds evenly and quickly distribute the hot mixture by using the mini offset spatula. You will need to work quickly as the hot mixture will set as it cools.
     
    Alternatively if you are using sheetpans you can tilt the pans back and forth and side to side until evenly distributed. Set pans in the fridge until set, about 5-6 hours.
     
  • Create Dessert Sushi

    Put a sleet of plastic food film on your station and un-mold the strawberry sheet from one of the sheet pans and lay it on the food film.
     
    Unwrap the food film from the formed rice pudding and lay the rice pudding log at the bottom of the strawberry sheet.
     
    Roll the sheet over the rice to form a tight cylinder and let the sheet overlap for ¼ inch and cut off excess strawberry sheet. Wrap the entire log in the food film and tie the ends and let sit for 5 minutes.
     
    Remove the food film from the log and cut into sushi like pieces.
     
    Adorn with your favorite accoutrements and Enjoy!!
