Place a large heavy bottom pot over medium heat. Add the red wine and white wine to the pan and allow it to boil.
Once boiling add the strawberries and allow them to sweat for 2 minutes.
Add the honey and vanilla extract.
Dry mix the sugar, hm pectin, and citric acid.
Whisk the strawberry mixture and sprinkle in the sugar, pectin, and citric acid.
Bring this mixture to a gentle boil and stir until the strawberries have softened.
Pour this mixture into the sanitized jars and seal. Allow the jars to cool until they seal themselves.
Store for up to a year if kept sealed or a month in the refrigerator.

Can this strawberry jam recipe be made without the wine, honey, and vanilla? If I don’t use those ingredients, do I have to replace them with something else?

Yes, they can be made without those ingredients, just replace them with more strawberries. Use just enough to replace the weight of the wine and vanilla.

I bought the wrong kind of pectin.. Slow set HM as opposed to rapid set for my small batch strawberry jam. It is nonreturnable. Can I use the slow set and just wait longer? Thanks!
