Ingredients
- Spicy Salted Orange Foam:
- 240g (1 cup) Water
- 2.7g (1 tsp) Sucrose Esters
- 125g (½ cup) Sour Orange Juice
- If you cannot locate sour oranges you can make a mixture of 2 parts orange juice and 1 part lime juice
- 5g (1 tsp) Salt
- 0.25g (â…› tsp) Hot Sauce Powder
- Margarita:
- 2 Lime Leaves
- 22.5g (¾ oz) Tequila
- 22.5g (¾ oz) Mezcal
- 30g (1 oz) Agave Syrup
- 30g (1 oz) Sour Orange Juice

- 22.5g (¾ oz) Blue Curaçao

Create Salt Foam
In a small pot mix the sucrose esters into the water and gently heat it until just dissolved. This can be done by whisking but the heat speeds up the process.
Cool the mixture and pour it into a blender with sour orange juice, salt, and hot sauce powder.
Blend for 10 minutes to create a nice stable foam.

Mix Margarita
Meanwhile place ice in a shaker cup muddle 2 lime leaves.
Add the tequila, meacal, agave syrup, sour orange juice, and blue curaçao.
Shake for 15 seconds and pour into a margarita glass.
Top the margarita with the salted foam and garnish with a lime leaf serve immediately.
