The Remedy from Existing Conditions

The Remedy is Dave Arnold’s (from Existing Conditions and Spinzall fame) take on a Pain Killer cocktail. The acid adjusted version of the Pain Killer takes the cocktail from saccharin to spectacular.

  • Lime Adjusted Orange Juice:
  • 100ml Freshly Extracted Orange Juice
  • 3.2g Citric Acid
  • 2g Malic Acid
  • Coconut Dulce De Leche:
  • 1 Can Sweetened Condensed Coconut Milk
  • Saline Solution:
  • 50ml Filtered water
  • 10g Coarse kosher salt (Diamond Crystal preferred)
  • The Remedy:
  • 1.5 fl oz Stiggins Fancy Pineapple Pum
  • .5 fl oz Wray and Nephew White Overproof Jamaican Rum
  • .75 fl oz Lime-adjusted orange juice
  • .75 fl oz Coconut Dulce de Leche
  • 4 drops Saline Solution
  • 2 oz Pebble Ice

  • Create Coconut Dulce De Leche

    Preheat a sous vide bath to 90°C (194°F).
     
    Place the unopened can in the sous vide bath and cook for 7 hours.
     
    After 7 hours, remove the can from the bath and allow it to cool to room temperature naturally, about 3-5 hours. Reserve at room temperature. Refrigerate once opened.
     
    CHEF TIP: Unopened cans are shelf-stable and do not need to be refrigerated.
     
  • Create Acid Adjusted Orange Juice

    In a mixing bowl, whisk all ingredients together. Reserve in the refrigerator until needed.
     
    Why Acid Adjust? Acid adjusting pineapple juice to match the acidity of lime juice is a technique that allows you to achieve the desired tartness in cocktails without introducing the distinct lime flavor. This process gives you greater control over the flavor profile of your cocktail.
     
  • Create Saline Solution

    Whisk the ingredients together. Reserve until needed.
     
  • Create Cocktail

    Combine the ingredients in a cocktail shaker with the ice and shake hard until partially chilled.
     
    Pour over the remaining pebble ice.
     
    Garnish the cocktail with a parasol and straw.
