This is just brilliant! Wellington is my wife favorite Birthday meal and I always cringe when I cut into it and it all just falls apart. Since we love the wellington, I usually cut and the tenderloin in half and Moo Gloo it together to get one large consistent cut of tenderloin so it all cooks up evenly. I will now most definitely use your suggestion adding the Sodium Caseinate and
Moo Gloo RM to the Duxelles to bind it all together. Thanks for the tips and I can’t wait to try this ASAP.
