How to Acid Adjust Juices

Why this works… Lemon Juice is 6% citric acid. Lime Juice is 4% citric acid and 2% malic acid. In our example. Pineapple juice is 0.8% citric acid, so to achieve the same punch as lime juice, we need to make up the balance and add 3.2% citric acid and 2% malic acid.

The ratios below are all measurements of citric and/or malic acid to 100ml of juice.

  • Grapefruit Juice to Lemon Acidity: 4 grams citric acid
  • Grapefruit Juice to Lime Acidity: 2.7 grams citric acid and 1.3 grams malic acid
  • Orange Juice to Lemon Acidity: 5.2 grams citric acid
  • Orange Juice to Lime Acidity: 3.2 grams citric acid and 2 grams malic acid
  • Pineapple Juice to Lemon Acidity: 5.2 grams citric acid
  • Pineapple Juice to Lime Acidity: 3.2 grams citric acid and 2 grams malic acid, 10 drops succinic acid solution

*If using succinic acid for lime-adjusting, prepare an 8% solution (8g succinic acid plus 92g filtered water). Add 10 drops to every 100ml of fresh juice.
