Amazing Aquafaba Marshmallows

Expand your marshmallow horizons with this simple and delicious plant-based marshmallow. With our Druids Grove Vegan Gelatin, you won’t be able to distinguish these marshmallows from the original. But you’ll have the satisfaction in knowing that they are homemade, plant-based, and delicious!

Ingredients

  • Marshmallow Ingredients:
  • 230g (1 cup) Aquafaba
  • 11.1g (1 Tbsp) Vegan Gelatin
  • 115g  (½ cup) Water
  • 450g  (2 cups) Granulated Sugar
  • 120g  (½ cup)  Light Corn syrup
  • 1g  (½ tsp) Kosher Salt
  • 2g  (½ tsp) Vanilla Extract
  • Coating:
  • 35g (¼ cup) Confectioners’ Sugar
  • 35g (¼ cup) Cornstarch
  • Nonstick Spray

Equipment

  • Stand Mixer with a Whisk Attachment
  • Heavy Bottom Pot
  • Rubber Spatula
  • Plastic Wrap
  • 8×10 Baking Dish
  • Unflavored Tooth Floss (optional)

Active Time: 35 Minutes
Total Time: 2 Hours

Yield

12 – 16 Marshmallows (depending on size)

  • Prepare Marshmallow Dish and Heat Sugar

    Line a 8×10 inch baking dish with plastic wrap and spray with nonstick spray, mix together the confectioners sugar and cornstarch and use it to dust the inside of the dish evenly.
     
    In a heavy bottom pot over medium heat, place the 115g (½ cup) water, granulated sugar, light corn syrup, kosher salt, and vanilla extract to 240°F.
  • Begin Whipping Aquafaba

    While that is heating use a stand mixer to whip together Aquafaba and vegan gelatin to stiff peaks. This will take about 10 minutes.
     
    Once the sugar mixture has been heated to 240°F and the whip has reached stiff peaks, slowly drizzle the warm sugar mixture into the whip on low speed.
     
    Once all the sugar mixture has been incorporated, whip for 5 minutes or until light and fluffy.
  • Set Marshmallows

    Working quickly move the marshmallow mixture to the lined baking dish, dust the top with remaining confectioners sugar mixture. 
     
    Let the marshmallows set for a few hours in a cool dry place.
  • Shape and Dust Marshmallows

    Fun tip; use unflavored tooth floss to cleanly and easily cut the marshmallows.
     
    Dust sides of marshmallows with confectioners sugar mixture to prevent sticking.
     
    Store covered in a cool dry place for up to 2 weeks.
