What are Instagel Gummies?

Instagel is a cold setting gelatin. This allows for uncooked gel applications such as boozy gummies. Instagel can be dissolved into a liquid simply by using a blender.
Ingredients
- 250g (1 cup) Cola
- 25g (1 oz) Lime Juice
- 90g (3 oz) Dark Rum
- 10g (2 tsp) Vanilla Extract
- 75g (½ cup) Instagel

Dry-Mix Instagel
Dry-mix any dry ingredents from the recipe with the instagel. Instagel is prone to clumping, dry mixing it with another ingredient is good practice to help prevent clumping. Doing so evenly distributes the instagel for the next step.
Blend Ingredients
Place all wet ingredients in a blender. Begin blending on medium speed. Gently sprinkle in the Instagel mixture until fully incorporated.
Blend for 5 minutes on medium high speed.
This allows the Instagel to fully hydrate. If this isn’t done for enough time you will end up with a gritty gummy
Allow the bubbles to separate from the cocktail. You may need to scoop some of the bubbles off the top with a spoon for the best appearance.
Pour Into Molds
Pour the gummies into the silicone molds and set for 3 hours in the refrigerator. After removing them from the molds you can serve them immediately.
Similar to the traditional gummies the molds can be gently coated in cornstarch prior to add the gummy mixture.
Store Gummies
If you would like to hold them for longer periods of time then you can lightly dust them in cornstarch and allow them to dry for a few hours.
These can be stored for up to a month in an airtight container.
