Mix and Match Granola Bar

Ingredients

  • Coconut-Almond Bars:
  • 45g (¼ cup + 1 tbsp + 2 tsp) Ultra-stik
  • 105g (½ cup) Water
  • 125g (1 cup) Rolled oats (toasted)
  • 60g (¼ cup) Chocolate Chips
  • 45g (4 tbsp) Toasted Coconut
  • 45g (4 tbsp) Almonds (sliced)
  • 45g (3 tbsp) Brown Sugar
  • 1g (¼ tsp) Salt
  • Mexican Chocolate Bars:
  • 45g (¼ cup + 1 tbsp + 2 tsp) Ultra-Stik
  • 105g (½ cup) Water
  • 125g (1 cup) Rolled Oats (toasted)
  • 40g (¼ cup) Banana Chips (roughly chopped)
  • 90g (¼ cup + 2 tbsp) Cashews (roasted)
  • 120g (½ cup) Mexican Chocolate
  • 45g (3 tbsp) Brown Sugar
  • 3g (½ tsp) Salt
  • Trail Mix Bar:
  • 45g (¼ cup + 1 tbsp + 2 tsp) Ultra-Stik
  • 105g (½ cup) Water
  • 125g (1 cup) Rolled Oats (toasted)
  • 75g (¼ cup + 1 tbsp) Dried Cherries (roughly chopped)
  • 75g (¼ cup + 1 tbsp) Dried Apricots (roughly chopped)
  • 30g (2 tbsp) Pepitas
  • 30g (2 tbsp) Sunflower Seeds
  • 15g (1 tsp) Flax Seeds
  • Sweet + Savory Korean Inspired Bars:
  • 45g (¼ cup + 1 tbsp + 2 tsp) Ultra-Stik
  • 105g (½ cup) Water
  • 125g (1 cup) Rolled Oats (toasted)
  • 15g (1 tbsp + 1 tsp) Gonchugaru
  • 125g (1 cup) Dried Pineapple
  • 30g (2 tbsp) Soy Sauce Powder
  • 4g (1 tsp) Garlic Powder
  • 25g (1 Tbsp) Candied Ginger, (sliced thin)
  • 2g (1 tsp) Dried Shrimp (crushed)
  • 10g (2 tsp) Sesame Seed
  • 30 (2 Tbsp) Brown Sugar

Equipment

  • Sheet Pan With a Non-Stick Mat 
  • Dehydrator (optional)

Timing

Active Time: 10 Minutes

Total Time: 24 Hours

Yield

10 – 15 Bars pre Recipe

  • Hydrate Ultra-Stik

    Whisk together the ultra-stik and water. This most likely will become clumpy. Fear not, these clumps will dissolve. 

    This may take about 5 minutes.

  • Combine Ingredients

    In a bowl add the ingredients (except for the brown sugar and salt) based on the suggested recipes above. You can get creative and add, remove, or create your own granola mixtures – the possibilities are endless!

    Add the Ultra-stik to the oat mixture and coat everything fully.

    Add the brown sugar and salt and mix until fully combined.

  • Spread & Dry Bars

    Spread the mixture evenly onto a non stick mat. Make sure the bars are no more than ½ inch thick.

    The bars can be dried in a few different ways.

    1. Placing the bars in a cool dry oven is the longest method but it can work. This will take about 24 hours.

    2. For any recipes that do not contain chocolate preheat an oven to 175°F. Place the bars in the warm oven and cook for 1 hours, then allow it to dry for 2-3 hours after the first hour.

    3. The bars can be placed in a dehydrator at 95°F and dried for 6-8 hours.

  • Cut Granola Bars

    The bars should be firm enough to cut but not too dry that they crumble. 

    The bars can be dried more once cut if you prefer a harder crispier bar.
