I am planning on a birthday cake for a 5 year old next month and am making white chocolate snowflakes. This would be a great added dimension to the cake! Do you think that they would pipe well?

As long as the tip is wide enough this should be fine. But there is no way to grind down the size of the culinary crystals without ruining the popping. So if you would like to have these be slightly thicker than they should work fine. Or possibly these could be stenciled as a way to prevent any issues.
