    Great recipe. Could we use kappa carageen instead of gelatin, or is the temperature gradient too high?

      You could as it begins to hydrate around 158F. But it will take some testing to perfect.

  • Great video. I’m interested in one of the holy grails of keto baking — the perfect very low carb bread and/or hamburger buns. There are a lot of options out there that include vital wheat gluten as an ingredient, but I’m looking for something gluten free.

    Great demonstration! I have 2 questions. First, I have RM transglutanminase on hand. Can it sub for the TI? Second, can you consider creating a carnivore version of the crust? LOL! Maybe using whey protein for base?

      Yes, you can substitute the TI for RM. We can look into making a carnivore version as a possibility!
