I’d like you to recreate a cracker that is actually crispy.

Butter crackers
2-1/4c almond flour
4 tbsp butter
2 egg whites
Whip butter. Add almond flour and egg white. Roll between parchment to 1/8 inch thick.
Cut into square with pizza cutter or knife. Bake at 400f for 10-14 minutes. Cool. Break apart

Sounds good, we might give that a try in the future!

I haven’t found a recipe for a keto boiled sugar sweet, but think there might be one out there. If not, could you give it a whirl?

The rationale for the possibility of such a beastie: Allulose. Allulose acts so much like sugar when heated. I’ve even heard that it’s possible to get allulose to run through the heated sugar stages (soft ball-hard crack), but I’m scared to try it myself.

I foresee much trial and error.

In our workings with allulose, we have not been able to get it to reach the heated stages of sugar. Perhaps at a higher temperature, but you run the risk of burning it.
