Did I buy the correct Koji to make Soy Sauce?
Kind of looks like I got the wrong stuff.
If you purchased Shiragiku Koji, that is the correct koji for making a dark soy sauce. Shirayuri Koji can be used but it it makes a lighter colored soy sauce.
