Pacojets have been around for a while; in the early 2000’s, we used one at a local French-Mediterranean restaurant to make frozen desserts, but the one amazing recipe I loved was to make a silky-smooth porcini mushroom bisque. The texture, mouth-feel, from the Pacojet added to the intensity of the flavor. Would love to have one…
